Paella Ilustrado

Ingredients (For the puddings)

  • 40g chicken legs
  • 20g squid, sliced
  • 20g crab
  • 10g shrimp, shelled
  • 30g pork lomo, cubed
  • 10g chorizo bilbao, sliced
  • 5g green peas
  • 1 cup calrose rice
  • 5g garlic, chopped
  • 5g onion
  • 1 tsp olive oil
  • 1 tsp paprika bilbao
  • 1/2 can tomato sauce
  • 10g atsuete
  • 2 lemons, sliced
  • 1 egg, boiled
  • 1/2 tsp salt and pepper
  • 1 tsp vetsin
  • 1 cup water

Method

Step 1

Saute garlic, onion and atsuete in olive oil until it becomes golden brown.

Step 2

Add chicken, pork, crab, squid and season with salt and pepper, paprika, vetsin, tomato sauce, rice and add the water.

Step 3

Boil for about 15 minutes.

Step 4

Add on top the chorizo bilbao, shrimp, green peas, red pepper, boiled egg. Cover with aluminum foil.

Step 5

Place in the oven for about 15 minutes.
