Chicken Inasal

  • 1 whole chicken quartered
  • 1/4 cup lemon juice or calamansi
  • 2 stalks lemon grass julienned
  • 1/4 cup atsuete oil or anatto oil
  • 5 cloves garlic minced
  • 1 tsp salt
  • 3 tbsp margarine or butter
  • 1 tsp ground black pepper
  • 1/2 cup vinegar
  • 1/4 cup brown sugar
  • 2 chili peppers chopped
  • 1/4 cup soy sauce
  • Bamboo skewers



Step 1

Marinate chicken in vinegar, garlic, lemon grass, salt, sugar and pepper at least one hour. Put on a skewer and set aside.

Step 2

For basting sauce combine the marinated juice, atsuete oil, margarine, lemon extract and soy sauce.

Step 3

Grill chicken over hot coals until roasted or alternatively an oven basting occasionally with the basting sauce to avoid sticking on grill.

Step 4

Place on platter, with garlic fried rice, atchara and sinamak and dipping sauce. To make Sinamak dipping sauce, simply combine soy sauce, chopped chili peppers, pepper and calamansi extract.
