Ingredients

  • 2 lbs ube yam root
  • 1 can (14 oz..) evaporated milk
  • 2 cans (12 oz..) condensed milk
  • 1/2 cup butter or margarine
  • 1/2 tsp. of vanilla (optional)

Method

Step 1

On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Step 2

Peel and finely grate the ube yam.

Step 3

Heat a big wok in medium heat.

Step 4

Melt butter or margarine, Pour in the condensed milk and vanilla flavoring. combine well.

Step 5

Pour in the 1 lbs grated ube yam,adjust the heat to low.

Step 6

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Step 7

Pour in the evaporated milk and continue to combine for another 15 minutes.

Step 8

Let cool and place on a large platter.

Step 9

Spread even amount of butter or margarine on top of the jam before serving.

Step 10

Refrigerate before serving the halayang ube.
