Lechon Paksiw

Ingredients

  • lechon (leftover), chopped
  • 3 cloves garlic, sliced
  • 1 onion, sliced
  • 1/3 cup vinegar
  • 3 tbsp. soy sauce
  • 1 tsp. peppercorns
  • 1/3 cup brown sugar
  • 2 bay leaves
  • 1 tsp. salt
  • 5 cups water
  • 3 cups lechon sauce
  • cooking oil

Method

Step 1

In a saucepan saute onion and garlic in cooking oil.

Step 2

Add the chopped lechon. Stir fry for 2 minutes.

Step 3

Then add the water. Bring to a boil.

Step 4

Add all the ingredients except the bay leaves, brown sugar and lechon sauce. Stir well.

Step 5

Lower the heat, cover and simmer for 15 to 20 minutes.

Step 6

Pour in the lechon sauce and brown sugar. Add more water if necessary.

Step 7

Add the bay leaves. Simmer for another 5 minutes.

Step 8

Serve hot with steamed rice.
